Do you want to make a top crust or use your own pie dough? We're testing out pie dough in a disk, ready to roll. There is enough for 2 - 9" pies. (This is the same exact dough we use for all our pies and hand tarts).

The biggest mistake people make when working with gf pie dough is they don't work it enough, they treat it like gluten pie dough and it ends up being crumbly. Don't be afraid to work the dough.
Instructions: store in the freezer if you're not going to use it within a week. Store in the fridge if you plan to use it in the next couple of days. To roll, take it out of the fridge and let it sit on the counter for about 10 mins then knead it so that you can roll it out. it should be a smooth dough, then roll it out on a floured surface to the thickness you want.
Diary Free dough: this dough is trickier (fragile) to work with, so if you have never worked with pie dough, I don't recommend you start with this.
