The one thing we missed most at Christmas time, when Regan was little, was not being able to make and eat gingerbread houses.
Assemble your own little gluten free house!
Included: house, a couple of gingerbread people, piping bag, frosting mix (just add water) - you provide the imagination and candy.
House has about 5"x5" foot print and is about 8" tall.
Build one or create a little village!

How to make the icing
Dump the powdered sugar into a bowl, preferably a stand mixer - if you don’t have one use a hand mixer or mix by hand.
Add 1/4 cup water and mix. then add 1 tablespoon more water if it needs it. (when I made it I used 1/3 cup of water total).
When you first mix, it might seem a little runny - the trick is to mix it for at least 4 mins. (I tend to mix mine for about 5 mins). Mix it on low/med and as you mix, it will thicken up due to the meringue powder in the mix- it makes it thick and fluffy.
The consistency of the icing is important - too dry and nothing will stick to it, too wet and it will take forever to set up and dry (this is most important when “gluing” the house together). The Icing consistency you are going for is toothpaste consistency.
